Akaushi/Angus Wagyu Ribeye Steaks
The ribeye steak is, along with the tenderloin, the most popular steak in America. While there are many variations on what can be called Wagyu, ours is the result of a mixing of the revered Akaushi breed (or Japanese red cow) with America’s mighty Angus. Our Akaushi are sourced from the very same family of farms that first brought the breed to the States, Akaushi being perhaps the most marbled beef in the world. Like a great bottle of red wine, each bite boasts a long delicious finish. Akaushi/Angus is tangy, with hints of blue cheese and olive oil and has a rich, aged flavor.
Berkshire Porterhouse Pork Chops
The T-Bone of pork, our porterhouse pork chops, are cut thick and meaty and include pieces from both the pork tenderloin and loin. They are our best seller and for good reason — roasted, sauteed, or grilled, the porterhouse pork chop has the advantage of working well in almost any culinary palette. Berkshire pork is elegant, luscious and smooth. The meat boasts a round and buttery flavor that melts on the tongue.
Red Wattle Bacon
Our bacon comes from our Heritage pigs and is cured by Paradise Locker Meats in Trimble, Missouri. This is some of the best bacon we've ever tried. Great for all the recipes you already love. Red Wattle meat is charmingly inconsistent and can be earthy, vegetal and herbaceous with a hint of cinnamon. Its expressive porky flavor is concentrated and bold.
Our products are cut by our partners at Paradise Locker Meats. The beef is fed no antibiotics or added hormones and is pasture-raised and grain-finished. Grass-fed corn-finished is what most restaurants and steak houses prefer. These are among the very best steaks produced in America. The pigs are raised with care using traditional methods guaranteed to produce the very best tasting meat and are processed at a Certified Humane facility.
