Cut thick and marbled gorgeously, each piece includes both the tenderloin and loin section of the pig, making these chops a unique treat, easy to cook (just a few minutes on each side), and satisfying for even the most demanding meat lover!
The secret to great pork is to start off with great ingredients, and nothing beats our storied Heritage breeds — Berkshire, Red Wattle, Duroc, Gloucestershire Old Spot, Large Black, and Tamworth. Each breed comes from a different culinary tradition, and boasts a distinctive, nuanced flavor.
All Heritage breeds have more marbling than industrially raised pigs, resulting in more tender and juicy meat. Our pigs are raised on-pasture, using traditional methods with no antibiotics ever by a network of American family farmers dedicated to preserving these slow-growing, pedigreed breeds, and are processed at a Certified Humane facility.
Heritage Foods USA is proud to work with three separate groups of independent family farms, each dedicated to a specific rare breed of pig. Larry Sorrell, based out of Missouri, runs a group of fifteen Amish farms who raise the Red Wattle — a breed originally raised in New Orleans and once thought to be extinct; David Newman, a preeminent farmer and scientist is owner of the oldest Berkshire genetic line in America and works with ten farmers in the Midwest; and Craig Good — who along with a group of neighboring farms in Manhattan, Kansas, is dedicated to preserving rare American and English breeds of livestock — has been raising the same line of pigs for three generations, including the Gloucestershire Old Spot and the Tamworth.
