We are proud to offer 100% grass-fed heritage lamb with histories spanning from Biblical times to the front lawn of the White House. Our four distinct breeds are purchased nose-to-tail and boast rich, tender meat with hints of clover, mushroom and lavender. Our Tunis, Dorset Horn and Navajo Churro lambs are raised in Vermont and our Katahdin lambs are raised in the Flint Hills of Kansas.
Porterhouse is the king of all steaks. Cut 1.5 inches thick from the most prized section of the strip loin, the porterhouse combines flavorful NY Strip with the tender filet. To be considered a true Porterhouse, and not just a T-Bone, the filet section must measure at least 2 inches wide off the bone. Only four Porterhouse steaks are cut from every steer.
Pork Tomahawk Chop
Each mighty chop is cut with extra long bones that go all the way into the rib section. So in essence you are eating both a st. louis style spare rib and a pork chop when you devour one. This is a meat lover's dream cut and offers different tastes and textures all in one portion. You will be sure to appreciate the steady hand of the butcher when you see the Tomahawk — each middle section of the pig is pulled off the line and expertly manipulated to achieve the cut.
Goat is a savory, lean red meat with a clean, herbaceous finish. Because of their similar shape and size, goat cuts can be prepared like you would lamb. From the tasty center of the loin, this bone-in cut that combines the loin and the tenderloin is perfect grilled or sauteed to medium rare with a coating of salt, pepper, and your favorite fresh herbs. All our goats are pasture raised, hormone and antibiotic free.
Pork Porterhouse Chop
The T-Bone of pork, our porterhouse pork chops, are cut thick and meaty and come from the tenderloin section on the ham end of the loin. They are our best seller and for good reason — roasted, sauteed, or grilled, the porterhouse pork chop has the advantage of working well in almost any culinary palette. And best of all, the porterhouse takes only a few minutes to cook.
Bison meat tastes clean, minerally, beefy, herbaceous, grassy and round. An adventurous alternative for beef eaters, bison is incredibly flavorful and toothsome while naturally lean. Bison have never been domesticated which makes them truly wild game. Bison are a keystone of the prairie ecosystem. The species of grasses, the wildlife, the birds – even the contour of the land reflects the hoof print of the bison. One might say bison are the “keepers of the plains”.
