This legend-in-the-making begins with gorgeous, pasture-raised chickens and the very finest blue cheese from one of the most decorated dairies in America. It is then seasoned, rolled and tied by hand in the Old-World style. This sweet and tangy roast is delivered prepped and ready for your dinner.
Named World's Best Unpasteurized Cheese at the 2014 World Cheese Award, Bayley Hazen from Jasper Hill Dairy has developed a loyal following because of its luxurious, fudge-like texture, toasted sweetness, and anise spice character. This cheese is dense and creamy, with well-distributed blue veins. The usual peppery character of blue cheese is subdued, giving way to the grassy, nutty flavors in the milk.
Thomas Odermatt is a third generation butcher whose intense focus on perfecting the porchetta and the porchetta sandwich has made him a superstar in San Francisco, and a champion of the artisanal food movement.
Like the Porchetta, the Chick-etta is easy to prepare, just season liberally with salt and pepper, and cook in a 325 degree oven until the internal temp reaches 165 degrees. We recommend pulling your roast from the oven five degrees before as the internal temperature of your roast will continue to rise even after coming out of the oven. Don’t forget, always let your roast rest before carving to allow the juices to redistribute.
