Named World's Best Unpasteurized Cheese at the 2014 World Cheese Award, Bayley Hazen from Jasper Hill Dairy has developed a loyal following because of its luxurious, fudge-like texture; toasted sweetness; and anise spice character. This cheese is dense and creamy, with well-distributed blue veins. The usual peppery character of blue cheese is subdued, giving way to the grassy, nutty flavors in the milk.

READY TO ROAST: The “Chick-etta” is so easy to prepare, just season liberally with salt and pepper, and cook in a 325 degree oven until the internal temp reaches 165 degrees. We recommend pulling your roast from the oven five degrees before as the internal temperature of your roast will continue to rise even after coming out of the oven. Don’t forget, always let your roast rest before carving to allow the juices to redistribute.
