in veal, and deserves a similar treatment. Braised whole with wine,
stock, and a vegetable medley, this makes a great meal for
entertaining or for family dining. Use it to flavor a pot of beans,
or a thick soup, just the way you would with a smoked shank. The
meat shreds into tender slivers, adding body and a rich savory
taste to any dish.
