Whole Filet of Beef - 5-6 lbs.
Filet Mignon, or the tenderloin of beef, is the most tender of
the roasts. Buttery soft and tender, nothing is easier to cook, or
makes a bigger impression on guests. Like any other roast, salt and
pepper this liberally, and throw it into a hot oven. Let it rest
and slice it or serve it cold. The Filet is a mild flavored cut,
and takes well to a variety of rubs or marinades. Try a porcini
rub, a coffee rub, or crushed black peppercorns. One whole filet
will feed about 12-14 people, so perfect for any gala dinner party
or on a buffet.
Our beef comes from the Piedmontese breed of cattle, which
originated in the foothills of northern Italy and is considered one
of the tastiest breeds in the world. Today, a network of family
farms is raising these cattle naturally, on a pure vegetarian feed
without antibiotics or hormones. Piedmontese beef has less fat and
cholesterol than commodity beef.
