The St. Louis Rib is a neater, square slab of ribs with the brisket bone trimmed off. As a result of the trim, it is a little more delicate, and less meaty. Hugely popular, St Louis ribs are often the most sought after as their uniform shape and thickness make them a bit easier to cook than the typical spare rib. Once again, the porky flavor is incomparable, and unless you really love barbecue sauce, these ribs are just fine cooked on their own with salt, pepper, and olive oil. A nice fresh herb and spice rub can be added as well, if you want to give them a little extra.
All our pork is from pasture raised, hormone and antibiotic free animals. They are raised with care using traditional methods guaranteed to produce the very best tasting meat. Our pork comes from Certified Humane Berkshire pigs or Animal Welfare Approved Red Wattle pigs and are processed at a Certified Humane facility.
