succeeded in creating an American version of the famed Serrano Ham.
One year of curing, after a full year of testing, has yielded the
Surry-ano Ham, named for the town in Virginia where Edwards is
based. Rivalling the curing traditions of Spain and Italy, the
Surry-ano has a rich full flavor, and an exquisite pliable texture,
exactly like its European counterparts. What makes it special is
Edwards signature smoke, a final step in a painstaking salt curing
process that leaves the outside of the ham a beautiful mahogany
color, while giving the meat a delicious smoky flavor.
Surry-ano hams are made from 100% Six Spotted Berkshires, pasture
raised and Certified Humane.
It takes anywhere from 11 to 20 months to make a ham like the
Surry-ano. S.Wallace Edwards and Sons is committed to producing the
very best cured meats possible, in spite of the cost and the length
of the process. Enjoy this delicacy as you would any great European
