Berkshire pork is elegant, luscious and smooth. The meat boasts a round and buttery flavor that melts on the tongue.
Red Wattle meat is charmingly inconsistent and can be earthy, vegetal and herbaceous with a hint of cinnamon. Its expressive porky flavor is concentrated and bold.
There is no wrong way to prepare pork loin but we recommend treating it with this no-fuss, quick and easy preparation — cut into small steaks, rub with salt, pepper, and olive oil and put in a hot pan for about 3 minutes on each side depending on how thick you cut the medallions. Or sear the whole piece and place pan in 400degree oven for about 30 minutes (140 degrees internal). To determine doneness make small incision in one of the steaks and make sure juice is not red. Pink is the desired color for pasture-raised, heritage breed, antibiotic free pork loin.
