The 5 Rib Rack: This is a cut that is almost impossible not to love. Our racks come from the cherished center part of the loin section of the pig. The pork chop from these racks is the cut most often offered at fine dining establishments.
Each 5 rib rack has five 12oz chops that can be separated with a steak knife. There is no wrong way to prepare a pork chop but we recommend a no-fuss, quick and easy preparation — salt, pepper, and olive oil in a hot pan for about 5 minutes on each side. Or sear the whole piece and place pan in 400degree oven for about 30 minutes (140 degrees internal). To determine doneness make a small incision in a chop and make sure juice is not red. Pink is the desired color for pasture-raised, heritage breed, antibiotic free pork chops.
All our pork is from pasture raised, hormone and antibiotic free animals. The pigs are raised with care using traditional methods guaranteed to produce the very best tasting meat and are processed at a Certified Humane facility.
