Picnic Shoulder Boneless: Roasted, baked, braised. This cut which has a bit less fat than the Boston Butt is another favorite for pulled pork. But it can be cut in chunks for stewing, or braised whole. The trick is to keep it low and slow with the shoulder so the collagen breaks down and the fat cooks out. Its a richly flavored and truly delicious cut, as well as an economical one.
