BREED VARIETY Boston Butt Bone-In, Half, about 4lbs Each: Berkshire, Red Wattle, Duroc
Boston Butt Bone-In, Half, about 4lbs Each:
Berkshire, Red Wattle, Duroc
BREED VARIETY Boston Butt Bone-In: Three Half Boston Butts, about 4lbs each:
Breeds include Berkshire, Large Black, Duroc, Red Wattle and Tamworth.
Each breed is clearly marked.
The Boston Butt is cut from the shoulder, and is a richly marbled, juicy piece of meat that is perfect for smoking, slow-roasting, or braising. The Variety Pack allows you to decide which breed produces your favorite meal. This is an unusual opportunity to get all three in one order.
At Heritage Foods USA we believe that to keep a breed alive, it has to be consumed. Because of that philosophy, we support farmers who are raising breeds that are considered endangered because they do not conform to the specifications of commodity agriculture; rapid growth and large litters. The emphasis on those two traits comes at the expense of flavor and texture. Breeds have different characteristics in terms of how they grow, and the various qualities of their meat.
Large Black pigs are listed as critically endangered by the American Livestock Breeds Conservancy. This English orchard pig was bred to lounge around orchards and is not a hard working pig. The ears that hang over its eyes show this. As a result the meat is delicate and even the fat is supremely edible.
The pure Six-Spotted Berkshire, which is now cultivated more widely than ever before, is a great all-purpose pig that offers delicious flavor with plenty of fat to keep it very juicy and succulent.
The 100% pure Duroc is an American breed, a cross between Jersey Red and what may have been an African red pig, though historians differ on this point. The Duroc is increasing in popularity for its excellent quality meat, tender, juicy, and mild in flavor.
The Red Wattle is a lean animal with tender meat. The breed, which originally hails from Louisiana, was thought to be extinct until a wild herd resurfaced in the forest of Texas in the 19th Century.
Tamworth meat is robust and gutsy and is the leanest of the pork breeds that we sell making it an excellent source of bacon and jowl. It has a balanced flavor that is the pork equivalent of a red beer. A safe food supply is a diverse food supply so the Tamworth's presence on the Threatened list means that demand is needed to preserve this delicious breed. The Tamworth is a hearty and strong animal making it an excellent candidate for a growing urban farm movement around the United States. Our Tamworths are raised in Kansas and in upstate New York.
The purity of the genetics in these breeds has been close to the edge of extinction, and with the help of farmers committed to preserving our agricultural patrimony, they are slowly returning to vigor. This fantastic package offers a great opportunity to compare and contrast breeds, and decide which one is your favorite. Once that decision is made.. well, you know where to go for more!
