What Is Goatober?
This October, Heritage Foods USA will sell hundreds of goats from
14 New York State family farms to New York City restaurants and
homes around the country. No Goat Left Behind is a project
conceived by cheesemonger Anne Saxelby after she learned that
because you cannot milk them, males are of little use on a dairy
farm. Led by project director Erin Fairbanks, what started as a
program to help dairies, has evolved into one dedicated to
expanding goat consumption in the U.S. while improving the appeal
of goat meat through cross breeding, for instance dairy breeds with
meat breeds.
