Five-rib Pork Rack: Cut from the meatiest, most
marbled part of the rack.
Surry-ano Ham: In the tradition of Serrano or
Prosciutto di Parma, the Surry-ano, named for the town in Virginia
where Edwards is located, has the same supple moist texture and
mouthwatering flavor of the best that Europe can offer. These hams
are aged for 400 days, after being given the Edwards signature
smoke.
Consider Bardwell Dorset: a washed-rind, raw
Jersey cow milk cheese. A soft ripening cheese with a rich, buttery
texture and seasonally influenced pungency. An elegant appetizer or
dessert, often served here in the historic village of Dorset,
VT.
Bayley Hazen Blue: a unique, balanced flavor
range from buttered toast to licorice, chocolate and hazelnuts; the
texture is fudgy and dense.

guaranteed to produce the very best tasting meat. Our pork comes
from Certified Humane Berkshire pigs or Animal Welfare Approved Red
Wattle pigs and are processed at a Certified Humane facility.
