The center cut shank is a perfect portion for one and towers on
the plate. It is primarily a braising cut. You can braise them with
wine, stock, and a vegetable medley and have a great meal for
entertaining or for family dining. Use them to flavor a pot of
beans, or a thick soup, just the way you would with a smoked shank.
The meat shreds into tender slivers, adding body and a rich savory
taste to any dish.
All our pork is from pasture raised, hormone and antibiotic free

guaranteed to produce the very best tasting meat. Our pork comes
from Certified Humane Berkshire pigs or Animal Welfare Approved Red
Wattle pigs and are processed at a Certified Humane facility. Our
other breeds include Duroc, Gloucestershire Old Spots, Large Black,
Mulefoot, and Tamworth.
