This cut is the piggy equivalent of the osso buco in veal, and
deserves a similar treatment. The center cut shank is a perfect
portion for one and towers on the plate. It is primarily a braising
cut. You can braise them with wine, stock, and a vegetable medley
and have a great meal for entertaining or for family dining. Use
them to flavor a pot of beans, or a thick soup, just the way you
would with a smoked shank. The meat shreds into tender slivers,
adding body and a rich savory taste to any dish.
