Twelve 14 oz Porterhouse Pork Chops, Four of each Breed (2 per
pack).
At Heritage Foods USA we believe that to keep a breed alive, it has
to be consumed. Because of that philosophy, we support farmers who
are raising breeds that are considered endangered because they do
not conform to the specifications of commodity agriculture; rapid
growth and large litters. The emphasis on those two traits comes at
the expense of flavor and texture. Breeds have different
characteristics in terms of how they grow, and the various
qualities of their meat.
The pure Six-Spotted Berkshire, which is now cultivated more widely
than ever before, is a great all-purpose pig that offers delicious
flavor with plenty of fat to keep it very juicy and succulent.
The Large Black is a favorite of farmers who appreciate the breed's
intellect and docility. Its strength, hardiness, and ability to
forage make it a valuable asset for pasture-based farming. The
breed, native to southwestern England, gained popularity in the
1800s as farmers began to see that the animal could easily turn
poor-quality feed into large quantities of high-quality meat. The
Large Black's physical characteristics - its dark skin and large
ears - make it stand out in terms of appearance and efficiency: its
dark skin protects it from sunburn during long hours of grazing,
and its long ears shield its eyes from dirt while foraging.
The Red Wattle is a lean animal with tender meat. The breed, which
originally hails from Louisiana, was thought to be extinct until a
wild herd resurfaced in the forest of Texas in the 19th
Century.
The purity of the genetics in these breeds has been close to the
edge of extinction, and with the help of farmers committed to
preserving our agricultural patrimony, they are slowly returning to
vigor. This fantastic package offers a great opportunity to compare
and contrast breeds, and decide which one is your favorite. Once
that decision is made.. well, you know where to go for more!
