are raising breeds that are considered endangered because they do
not conform to the specifications of commodity agriculture; rapid
growth and large litters. The emphasis on those two traits comes at
the expense of flavor and texture. Breeds have different
characteristics in terms of how they grow, and the various
qualities of their meat.
The Red Wattle is a lean animal with tender meat. The breed, which
originally hails from Louisiana, was thought to be extinct until a
wild herd resurfaced in the forest of Texas in the 19th
Century.
The pure Six-Spotted Berkshire, which is now cultivated more widely
than ever before, is a great all-purpose pig that offers delicious
flavor with plenty of fat to keep it very juicy and succulent.
The 100% pure Duroc is an American breed, a cross between Jersey
Red and what may have been an African red pig, though historians
differ on this point. The Duroc is increasing in popularity for its
excellent quality meat, tender, juicy, and mild in flavor.
The purity of the genetics in these breeds has been close to the
edge of extinction, and with the help of farmers committed to
preserving our agricultural patrimony, they are slowly returning to
